Ice Wine 
is the result of intentionally leaving a small amount of grapes to freeze on the vine.

The winemaker hopes for an early arrival of an arctic front to drop the temperature in the vineyard to at least -80C. It must be that cold to freeze the fruit into solid "marbles" (that will bounce off a concrete floor!) because the sugar in the grapes acts as an antifreeze to prevent freezing at warmer temperatures.

During these early, weaker arctic fronts, when the sun rises so does the temperature. Thus, the grapes are picked in the early morning hours so they may be pressed before daybreak.

During the pressing, all the sugar, acid and flavour components slowly drip out. The water in the grapes is held back in the press in the solid state of ice crystals. The result is a natural concentration without altering the flavour components, as would happen in heat concentrating.

Ice Wine may be compared to a liqueur, except it is at a lower alcohol level more typical to wine...thus eliminating the burning sensation that liqueur at 40% alcohol per volume would give. The sweetness is balanced by an acidity that is also concentrated in the winemaking process.

This wine is meant to be sipped and enjoyed. Just as other dessert wines. The flavours lock into one's taste buds and linger..., linger..., linger.
